Pani Tenga Recipe

Pani Tenga is also known as KAHUDI and is a fermented mix of mustard seed powder, salt and tamarind or lemon juice.

  1. Firstly, we need to clean, was and then dry the mustard seeds.
  2. Grind the mustard seeds into the grinder and sieve them.
  3. Now clean the plantain leaf and dry and soften it by keeping it on fire.
  4. Apply the dry grinded powder onto the wrong side of the plantain leaf.
  5. Now we need to sprinkle salt, chilli powder and sugar to the leaf.
  6. To the mustard powder, add little amount of lemon juice.
  7. Knead the mustard powder with the help of your hand for about 15 minutes.
  8. With the prepared mixture, make balls.
  9. Flatten the balls with your palm and wrap it on the plantain leaf.
  10. Keep the prepared parcel inside the container for about 3-4 days.
  11. After 3-4 days, Pani Tenga will be ready to serve.
