Lemon Icebox Pie Recipe

Lemon icebox is a dessert consisting of lemon juice, eggs and condensed milk which is made of graham crackers and butter. It is a signature dish of Clancy’s in New Orleans.

  1. Heat the oven to 325 degrees F.
  2. Break the graham crackers into small pieces and place them on the bowl of food processor along with sugar and salt.
  3. Pulse until the cracker crumbs are semi-fine and till the crackers and sugar are combined.
  4. Pour butter into the food processor and pulse until the butter is properly blended.
  5. Transfer the crust into a 9-inch springform pan and push the crumb mixture in the pan so that the mixture is two-third way up the pan.
  6. Use the bottom of the measuring pan to press the crust and set it aside.
  7. Now we need to mix the condensed milk with lemon juice and keep it aside.
  8. Whish the zest with the egg yolk in a medium sized bowl until the mixture is pale for about 30-60 seconds and then mix the prepared mixture into the lemon juice-condensed milk mixture.
  9. Place the springform pan on a baking sheet.
  10. Pour the mixture into the crust and carefully put the baking sheet in the oven.
  11. Bake until the center jiggles slightly like a soft setting custard for about 25 minutes.
  12. Remove it from the oven and cool down for 1 hour.
  13. Now cover the pan loosely with a plastic wrap and freeze for at least 6 hours.
  14. In order to prepare the cream, pour the heavy cream in the bowl of a mixer.
  15. Add the vanilla extract with the confectioner’s sugar.
  16. Whip the cream initially on low speed and then increase the speed to medium-high so that a small peak forms for about 1 ½ minutes.
  17. Remove the pie from the sides of the pan.
  18. Top the crust with the whipped cream and serve it.
