Chhena Gaja Recipe

Chhena Gaja is one of the most popular and famous sweet dish from Orissa, Northern India. It is a dessert made with sweet sugar syrup. These Chhena Gaja are sweet, soft, juicy, delicate and melts in mouth.

  1. Pour lemon juice and mix mixture persistently till it gets soured.
  2. Separate the drain through a muslin cloth.
  3. Now we need to wash Chhena under running water to remove the lemon taste.
  4. Press the Chhena so as to remove unexpected water from it.
  5. Now keep aside Chhena in a separate bowl.
  6. Add semolina to the bowl having Chhena and squeeze the mixture to obtain a raw consistency.
  7. Now we need to make 16 to 20 equivalent balls out of the mixture.
  8. With the help of your palm, shape every ball into a rectangular shape.
  9. Heat the oil to 180 degrees C in a deep fryer.
  10. Drop all the Chhena rectangles in the oil till they become golden brown in color on both sides.
  11. Keep aside the Chhena Rectangles after frying.
  12. Now we need to prepare the sugar syrup. For it, heat up water ans sugar together in a pan and cook for about 5-6 minutes.
  13. Mix the sugar syrup ceaselessly till 1 string consistency is arrived.
  14. Remove the sugar syrup from high temperature after the desired consistency is obtained.
  15. Pour rose water into the syrup and mix well.
  16. Sink the Chhena rectangles into the sugar syrup for some time.
  17. Chhena Gajas are prepared to be served.
